i used:
- 2 flounder fillets (about 6 oz total)
- 2 tbsp unsalted butter, melted
- 1 clove garlic, grated
- zest of 1/2 lemon
- juice of 1/2 lemon (about 2 tbsp)
- 1/8 tsp paprika
- 1/2 tbsp olive oil
- 1/4 cup panko breadcrumbs
- salt
- black pepper
- garnish: fresh parsley, additional lemon wedges for serving


to make baked flounder:
- preheat oven to 400°f
- lightly grease a shallow baking dish with butter
- in a small bowl, mix together the melted butter, lemon juice, grated garlic, lemon zest, paprika, salt, and pepper
- in another bowl, toss the panko with olive oil
- place the flounder fillets on the prepared baking sheet, pour the lemon butter mixture over the fillets
- sprinkle the panko mixture evenly on top of each fillet, pressing gently so it adheres
- bake for 12-15 minutes, or until the fish is opaque and flakes easily with a fork
- broil to get the panko to a nice golden brown, ~1-2 minutes
- garnish with fresh parsley and serve with extra lemon wedges
