i used:

  • 2 flounder fillets (about 6 oz total)
  • 2 tbsp unsalted butter, melted
  • 1 clove garlic, grated
  • zest of 1/2 lemon
  • juice of 1/2 lemon (about 2 tbsp)
  • 1/8 tsp paprika
  • 1/2 tbsp olive oil
  • 1/4 cup panko breadcrumbs
  • salt
  • black pepper
  • garnish: fresh parsley, additional lemon wedges for serving

to make baked flounder:

  1. preheat oven to 400°f
  2. lightly grease a shallow baking dish with butter
  3. in a small bowl, mix together the melted butter, lemon juice, grated garlic, lemon zest, paprika, salt, and pepper
  4. in another bowl, toss the panko with olive oil
  5. place the flounder fillets on the prepared baking sheet, pour the lemon butter mixture over the fillets
  6. sprinkle the panko mixture evenly on top of each fillet, pressing gently so it adheres
  7. bake for 12-15 minutes, or until the fish is opaque and flakes easily with a fork
  8. broil to get the panko to a nice golden brown, ~1-2 minutes
  9. garnish with fresh parsley and serve with extra lemon wedges
