Easy Buttery Lemon-Baked Flounder with Crispy Panko Crust

Ingredients
  

  • 2 flounder fillets about 6 oz total
  • 2 tbsp unsalted butter melted
  • 1 clove garlic grated
  • zest of 1/2 lemon
  • juice of 1/2 lemon about 2 tbsp
  • 1/8 tsp paprika
  • 1/2 tbsp olive oil
  • 1/4 cup panko breadcrumbs
  • salt
  • black pepper
  • garnish: fresh parsley additional lemon wedges for serving

Instructions
 

  • preheat oven to 400°f
  • lightly grease a shallow baking dish with butter
  • in a small bowl, mix together the melted butter, lemon juice, grated garlic, lemon zest, paprika, salt, and pepper
  • in another bowl, toss the panko with olive oil
  • place the flounder fillets on the prepared baking sheet, pour the lemon butter mixture over the fillets
  • sprinkle the panko mixture evenly on top of each fillet, pressing gently so it adheres
  • bake for 12-15 minutes, or until the fish is opaque and flakes easily with a fork
  • broil to get the panko to a nice golden brown, ~1-2 minutes
  • garnish with fresh parsley and serve with extra lemon wedges
  • i love serving this with mashed potatoes and garlicky sauteed greens like spinach — enjoy!
