early girl tomato zaru soba (summer dipping soba!)

when it’s hot outside, there’s nothing better than cold noodles with something light and refreshing to dip them into. i recently made this tomato version of zaru soba and loved the combination of sweet, juicy summer tomatoes while still keeping that refreshing, cooling feeling.

i especially love the little bit of fresh ginger here. it gives the tomatoes a subtle warmth and freshness that makes everything taste even more vibrant without overpowering them. served ice cold with chewy soba, it’s effortless but feels unique!

i used (for 2 servings): 

  • 2 servings of soba
  • 5 early girl tomatoes, grated (~3/4lb tomatoes, 1 large heirloom tomato works too)
  • 1 tbsp mirin
  • 1/2 tbsp soy sauce
  • 1/2 tbsp sake
  • 1 tsp sesame oil
  • 1/4-1/2 tsp grated ginger
  • salt
  • 2 ice cubes

to assemble tomato soba:

  • cook soba per package instructions until texture is to your liking, drain and rinse with cool water
  • mix together everything else other than the ice cubes (tomatoes, mirin, soy sauce, sake, sesame oil, and ginger) along with a heavy pinch of salt. adjust seasoning to taste
  • divide tomato mixture into two bowls and place an ice cube into each bowl
  • ready to serve! dip your soba into the tomato mixture, give it a swirl, and enjoy!
