crispy smashed potatoes with smoked salmon
I love making crispy smashed potatoes for gatherings with friends because 1) they’re v yummy and 2) they’re just a liitttllee too much effort for me to do for myself. This version is a little ~fancy~ with creme fraiche, smoked salmon, and pickled onions. These potatoes are boiled to fork-tender perfection, then air-fried to a golden crisp. The combination of rich creme fraiche, savory lox, and tangy pickled onions creates a flavor explosion in every bite. Perfect for gatherings or a special treat — it’s 11/10
i used:
- 1 lb baby potatoes
- 1/3-1/2 cup creme fraiche
- 1.5 oz smoked salmon
- pickled red onions
- garnish: parsley, chives, edible flowers
to make crispy smashed potatoes:
- wash baby potatoes and add them to a pot. fill pot with water until potatoes are just covered, seasoning the water with salt.
- bring the water to a boil over medium high heat and lower to medium and let the potatoes simmer for ~25 minutes until fork tender
- once tender, drain potatoes and rinse with cool water, let them sit for ~10 minutes until they dry off
- then take a flat-bottomed cup and gently smash each potato
- place potatoes on your air fryer try and drizzle with olive oil, salt, and pepper
- air fry at 400F for 12-15 minutes until golden brown and crispy (alternatively bake at 425F for 20-25 minutes, flipping halfway)
assembly:
- grab a large plate and coat the bottom of the plate with a layer of creme fraiche
- place crispy potatoes on top and layer with small pieces of smoked salmon and slices of pickled red onions
- finish off with an herb or flower garnish to give it additional vibrancy!
