wash baby potatoes and add them to a pot. fill pot with water until potatoes are just covered, seasoning the water with salt.
bring the water to a boil over medium high heat and lower to medium and let the potatoes simmer for ~25 minutes until fork tender
once tender, drain potatoes and rinse with cool water, let them sit for ~10 minutes until they dry off
then take a flat-bottomed cup and gently smash each potato
place potatoes on your air fryer try and drizzle with olive oil, salt, and pepper
air fry at 400F for 12-15 minutes until golden brown and crispy (alternatively bake at 425F for 20-25 minutes, flipping halfway)
