Creamy Smoked Trout Cucumber Bites
I classify these cucumber bites as “luxury on a budget” because it feels like the kind of hors d’eouvres you might get served at a charity gala or a wedding, but it’s made with just some creamy dairy (I used greek yogurt and mascarpone, but whipped cream cheese, creme fraiche could also work). While I love the fancy feeling of serving these as bites, it’s also delicious as a spread! I also think this would also be good with some chives or finely minced red onion but unfortunately i can’t stand either sooooo 🙂
i used:
- 1 tin smoked trout (I like the one from trader joe’s!)
- 1/2 cup full fat greek yogurt
- 1/2 cup mascarpone
- 1-2 tbsp capers
- juice of 1 baby lemon (1/2 of a medium)
- handful of chopped dill
- salt and black pepper
- extra virgin olive oil
- 5 persian cucumbers
- optional: chives/red onion if you like that onion flavoring (i don’t lol)
- garnish: dill, capers
to make:
- mix everything together and season with salt, black pepper, and a drizzle of extra virgin olive oil
- slice cucumbers into ~3/4 inch rounds and top with a piece of dill and a caper
