chili crisp egg salad with cucumber and radishes
I’ve been making this ever since I saw my friend Sincere post a version of it on his stories last year buuuutt I never never measure.. anyways I finally (kinda) did it and now you need to make it!!
I used (to make 2 sandwiches):
- 5 eggs, hard-boiled (11 minutes for meee)
- 1/2 persian cucumber, chopped up
- 1 radish, diced
- 1 tbsp scallions
- 1-2 tbsp capers
- 1-2 tsp laoganma chili crisp
- 5 pickle slices, diced
- ~2-3 tbsp kewpie
- splash of milk
- dash of white pepper
- drizzle of sesame oil
- salt
To make:
- Boil eggs and submerge in ice water bath
- Separate the egg yolks and whites, mash up egg yolks with a fork and dice up egg whites with a knife
- In a bowl, add all of your ingredients and mix together well, seasoning to taste
Lots of ranges here because it really depends on personal preference!! The boy doesn’t care for capers very much and enjoys it with less, whereas I looovee the brininess and could always up the amount of capers and pickles in here.
