Thai Basil Chicken (Pad Krapow)
Thai basil chicken (Pad Krapow) is so flavorful and easy to whip up. In these quarantine times – frozen chicken breast, green beans, and birds eye chilis are your best friend. This recipe feeds 2 Christy’s.. use your best judgment on if that’s one or two meals for you.
Ingredients:
- 2-4 birds eye chili, depending on how spicy you want it
- 2 cloves garlic
- 1 chicken breast, cubed small
- 1/2 cup green beans, cut into 1/2 inch pieces
- 1 tsp soy sauce
- 1 tsp dark soy sauce
- 1 tsp oyster sauce
- 1 tsp fish sauce
- 1/4 tsp sugar
- Handful of Thai basil
- To serve: rice, egg, cucumber wedges
Directions:
- Grind up chili and garlic in mortar and pestle or mince
- Heat up 1 tsp cooking oil in a wok on medium low heat and fry the chili and garlic until the garlic starts to turn a golden brown ~2 minutes
- Add in chicken and stir fry until roughly all sides turn white
- Add green beans and stir fry/cook for ~3 minutes
- Mix in sauces and sugar, cover and let cook for ~3 minutes
- Turn off heat, stir in Thai basil, and cover lid for another 3 minutes
- Serve with rice, fried egg, and cucumber wedges
