Strawberry Sandos
These Japanese-inspired strawberry sandos are just absolutely delightful and only require 4 ingredients! And who knew freshly whipped cream was SO good?? Peak strawberry seasons (read: now) is the perfect time to make these – you can also use other fruit like kiwi, oranges. I’ve also seen some people mix matcha powder into the whipped cream which also sounds divine.
For 1 full sando:
- 2 slices of brioche or shokupan
- 2-3 tsp white sugar, depending on how sweet you like things – I use 2
- 2/3 cup heavy whipping cream
- 5 medium strawberries
To make:
- Whip the cream using a whisk or stand mixer. Whip the cream until soft peaks form and then add in the sugar and whip until firm peaks
- Cut off crusts on the bread and lay them out on top of a piece of saran wrap
- Spread whipped cream on both slices
- Place strawberries and then add more whipped cream to fill the gaps
- Cover with plastic wrap and refrigerate for 20 mins. Note: if you want an aesthetic sandwich look with just 2 halves, mark with a sharpie on the plastic wrap with which side you want to cut. You’ll want to cut down the side that has all the strawberries facing the same direction (see image above)
- Cut into 2 or 4 sections (I like 4s because they’re smaller sandwiches and easier to eat)
