Gochugaru Esquites

The first time I remember having esquites was at Tacombi, a Mexican restaurant I’d frequent in new york, particularly on first dates. Yes, solid tacos, cute + chill ambiance, good margs, all conducive to a first date! buuutt I also knew that if the dates didn’t go well, at least I’d get esquites hehe.

Well we took the girl out of NY, and out of first dates, so she’s just gotta make her own now :’) thankfully an easy one!

I used:

  • 4 ears of sweet corn
  • 1 jalapeno de-seeded, minced
  • 1 clove garlic, grated
  • 1/4 cup cotija
  • 2-3 tbsp mayo
  • 1 tsp gochugaru
  • juice of 1 lime
  • handful of chopped cilantro
  • salt

To make:

  • heat up oil in a pan over medium heat and cook corn until charred, seasoning with salt ~15-20 minutes. I recommend letting it sit untouched for the first 10 minutes or so and then flipping it once the first side is charred
  • move to a bowl and let cool slightly, then mix in other ingredients
  • adjust to taste! serve warm or at room temp
