Crispy Curry-Spiced Wings with Herby Yogurt Dip

Deep frying is my nightmare, and it’s not just the oil splatters, I hate the before, during, and after. It’s temperamental, the cleanup sucks, and you’re left dealing with a big vat of oil!! But all good because it has helped me master the art of crispy baked chicken wings. This variation is coated with a spiced curry seasoning which pairs perfectly with a creamy yet refreshing yogurt dip made with Straus Family Creamery Organic Whole Milk Plain Greek Yogurt!

The key to getting the crispiest wings in the oven is to dry out the skin. Here are some steps you can take to make them as dry and crisp as possible!

  • Pat wings dry completely before seasoning
  • Coat with baking powder (aluminum-free!) and salt to remove moisture from the skin
  • Set them in the fridge for at least 1 hour, ideally overnight, to dehydrate even further

For the wings, I used (serves 2):

Prep time: 15 minutes

  • 1 lb chicken wings
  • 1/2 tbsp baking powder
  • 1/2 tbsp curry powder
  • 1/4 tsp garlic powder
  • 1/2 tsp fish sauce
  • 1/2 tsp Kashmiri chili powder (sub with half paprika, half cayenne)
  • 1/4 tsp salt
  • neutral cooking oil

For the sauce, I used:

  • 1/2 cup Straus Family Creamery Organic Whole Milk Greek Yogurt
  • 1/2 Persian cucumber, grated
  • 1/2 tbsp chopped mint
  • 1/2 tbsp chopped cilantro
  • squeeze of lemon juice
  • salt
  • pepper
  • extra virgin olive oil
  • optional: chaat masala (can also use some cumin-coriander powder)
  • note: this does yield some leftover sauce but i’d rather have too much sauce than too little!! i like to eat the extra sauce as a snack with cucumber + crackers.

To make:

  • Pat wings dry and toss in the seasonings listed above
  • Set up a wire baking rack above a lined baking sheet, place wings on the rack, and refrigerate uncovered for at least an hour (ideally overnight)
  • Bake at 425F until fully cooked ~45 minutes. At the 30-minute mark, I like to spritz the wings with a little neutral cooking oil
  • Mix together the sauce, adjust the seasoning  to taste, and finish off with a drizzle of extra virgin olive oil
  • Serve + enjoy!
