cucumber honeydew hugo spritz

my partner loves melon, so anything honeydew is always an easy sell in our house. this cucumber honeydew hugo spritz started with that in mind — lots of ripe, sweet honeydew blended with cucumber, coconut water, and a little honey, then topped with elderflower and prosecco. it actually vaguely reminds me of a melona bar. not in a creamy way but in a sweet, floral honeydew flavor type of way.

i made this one for our italian wine bar night and loved how pale green and summery it turned out. it was the perfect cool and refreshing contrast to the other peach & passionfruit hugo spritz i served!

i used

for the cucumber honeydew puree

  • 1/2 ripe honeydew, de-seeded and chopped
  • 2 persian cucumbers, chopped
  • 1 cup coconut water
  • 1–2 teaspoons honey, to taste

for cucumber honeydew hugo spritz

  • 2 oz cucumber honeydew puree
  • 3/4 oz St-Germain elderflower liqueur
  • 1/4 oz fresh lime juice
  • 3 oz prosecco
  • ice
  • mint

to make

  • add the honeydew, cucumber, and coconut water to a blender. blend until smooth. add honey to taste and then blend again, this should yield ~20 oz cucumber honeydew puree
  • to make one spritz, fill a wine glass with ice. add 2 oz cucumber honeydew puree, 3/4 oz St-Germain, and 1/4 oz fresh lime juice. top with 3 oz prosecco and gently stir everything together. garnish with a mint sprig
  • serve immediately while it’s cold and bubbly.
