chilled tomato somen
I feel like I’ve been enviously watching everyone else eat tomatoes on ig for the last 2 months and it’s finally my turn!! We had a colder than usual winter so I didn’t even see tomatoes at the farmer’s market until august?? This might just be the easiest tomato noodle recipe you’ll make.. ever. The tang of the rice vinegar, freshness of the grated garlic, combined with sweet sweet early girl tomatoes, it is r-e-f-r-e-s-h-i-n-g.
I used:
- 1 serving of somen noodles
- 2 medium-sized in-season tomatoes (i used dry-farmed early girls which are so sweet + yummy!!)
- 1 clove grated garlic
- 1 tbsp rice vinegar
- 1 tsp mirin
- 1/2 tsp soy sauce
- salt to taste
- toppings: tomato skin, cucumber, radish
to make:
- cook somen and rinse with cold water and drain, chill with ice cubes
- grate tomatoes and combine with garlic, rice, vinegar, soy sauce, mirin, and salt, adjust to taste.
- add tomato sauce to somen and garnish with chopped up tomato skin, cucumbers, radish
