Bacon Cheddar Chive Scones
To be completely honest, I’ve never liked scones. They were always that dry-ish looking pastry that I avoided at every morning meeting. As in, would rather not eat a pastry at all than have to eat a scone. Paying for a scone at a coffee shop? Not a thought I’ve entertained. But these, these scones, my friend, are different. Savory, with ooey gooey cheese that I can not say no to. So good that they didn’t even make it to breakfast the next day. Vegetarian? Have no fear – just leave the bacon out.
Ingredients:
- 2 cups all purpose flour
- 1 tbsp baking powder
- 1 tsp sugar
- 1/2 tsp salt
- 3 tbsp cold butter, large cubed
- 1 cup medium cheddar, cubed small
- 2 slices thick cut bacon, cooked and diced
- 2 tbsp chives (a little over half a Trader Joe’s pack)
- 1 cup heavy cream
Directions:
- Whisk together the dry ingredients: flour, baking powder, sugar, salt
- Mix in the butter. It’ll remain chunky but try to break it down into smaller pieces with your whisk, or, if you’re me, your hands
- Add in the good stuff and mix: chives, bacon, cheddar
- Starting with 3/4 cup of heavy cream, mix together the dough. Add in more cream as needed until the dough comes together. It’ll still be a bit loose and lumpy but shouldn’t be falling apart
- Place on floured surface and flatten out until round and about 7 inches in diameter. Cut into 8 pieces, pulling each piece away from the center so that they’re an inch apart from each other
- Brush each piece with heavy cream
- Bake at 425˚F for ~25 minutes, until the outside is a beautiful golden brown
- Serve with coffee & enjoy!
